6 med. potatoes, peeled and cubed
1/2 c. Parmesan cheese
1 (3 oz) pkg cream cheese
2 Tbs. butter
2 Tbs. green onion, chopped
1 (single serve) pkg onion soup mix
A dash of black pepper
2-4 Tbs. milk
2 eggs, beaten
3 c. crushed cornflakes

Directions:
Directions:
Cook the potatoes in unsalted water about 15-20 minutes or until tender. Drain well and mash. Stir in cheeses, butter, onion, soup mix and pepper. Mix well. Add the milk if the mixture seems to thick. Shape into balls. Dip each ball in beaten egg, then roll in cornflakes. Place on a greased baking sheet, (I use ungreased Silpats), and bake at 400ºF for 10-15 minutes, until hot and crispy.
