1 c. chopped onion
1/4 c. butter, melted
4 cups cooked rice
16 oz. cottage cheese
16 oz. sour cream
2 c. grated cheddar cheese
2 cans (4 ozs. each) chopped green chiles, drained
3/4 tsp salt
1/8 tsp pepper
1/4 c. chopped parsley

Saute onion in butter. Combine all ingredients in a large casserole. Mix well. Bake @ 375º for 30 minutes. Note: Can be made ahead, refrigerated and baked when needed.
