Pie Dough: generous 3/4 cup all-purpose flour, pinch of salt,2 1/2 oz/75 g cold butter cut in pieces, cold water

Filling: 3lbs pippin or other firm sweet apples, peeled and cored, 1 tsp lemon juice, 3 heaping tbsp butter, 1/2 cup granulated sugar, 1/3 cup cold water, 2/3 cup heavy cream, confectioners sugar to dust.

Lightly grease a 9-inch loose-bottom fluted tart pan. Sift the flour and salt into food processor, add the butter, process until the mixture resembles fine bread crumbs. Transfer mixture into a large bowl, add cold water to bring the dough together. turn out on floured counter, roll dough 3 1/4 inches larger than the pan. Carefully lift to pan and press to fit. roll rolling pin over top of pan to neaten the edges and trim excess dough. *Tip* fit a piece of parchment paper into tart shell, fill with dried beans, let chill in fridge for 30 minutes. Meanwhile, preheat oven to 375 Fahrenheit.

Remove pastry from fridge, bake for 10 minutes(with parchment and beans), then remove the beans and paper, return to oven for % more minutes.

Meanwhile, take 4 apples, cut each into 8 pieces and toss in lemon juice. Melt the butter in a skillet and saute the apple pieces until just starting to Caramelize and brown on the edges. Remove from the skillet and let cool.

Slice the remaining apples thinly, put them in a pan with the superfine sugar, and cook for about 20-30 mins. until soft. Spoon the coked apple into the pastry shell and arrange the reserved apple pieces on top in a circle. Bake for 30 mins.

Pour the granulated sugar and water in a pan and heat until the sugar dissolve. Boil to form a caramel. Remove from the heat and add the cream,stirring constantly to combine into toffee. remove the tart from the oven, pour the toffee over the apples, and let chill for 1 hour. When ready to serve sift a little confectioners sugar over the tart. Serve with thick cream (optional but totally yummy!)
