3 tablespoons of butter
3 tablespoons of flour
2 cups of milk
1 can of tuna (drained)
Optional: one can of peas, drained, or one box of frozen peas
Salt and pepper to taste

Directions:
Make a cream sauce:
Melt butter in a medium saucepan. Add flour and stir constantly until lightly browned. Gradually stir in the milk.

Cook, stirring, until sauce is thickened.
Add the tuna (drained). (You can substitute—or add—one can of peas or a cup or so of leftover frozen peas.) Cook gently until heated through. Salt and pepper to taste.
Serve over toast, or—for a special treat—over mashed potatoes. Talk about comfort food!

This is a very 40’s or 50’s dish. Every American household used to serve it, but nobody seems to serve it anymore.
