2 Tbs olive oil
1/2 cup sherry
1 pound portobello, shitake and white mushrooms, sliced
3 cups chicken or vegetable stock
1 qt heavy cream
1 lb jumbo lump crab meat
salt to taste
freshly ground pepper to taste
creme fraiche, garnish
sliced mushrooms, garnish

Directions:
Directions:
In a large pan heat olive oil and sherry. Add mushrooms and saute until tender. Add the stock. Bring to a boil, then turn down to a simmer. Add the heavy cream. Bring the mixture back to a simmer over low heat. Add the crab meat, salt and pepper. Ladle into warm bowls and top with a dollop of creme fraiche and sliced mushrooms. Serves 4-6.
