2 cups flour
1/2 cup Crisco
2 egg whites
4 T buttermilk

Filling
2 1/2 cups sugar
1 1/2 cups water
6 Tablespoon flour
1/4 teaspoon salt
4 1/2 cups chopped dried apricots

Directions:
Directions:
Crust: Cut Crisco into flour. Beat egg whites until foamy. Add egg whites and buttermilk to flour. Form into dough. Roll out on floured surface. Cut into circles using a saucer.

Filling: Soak dried apricots until soft enough to chop finely. Use water from the fruit for liquid in the recipe. Combine all ingredients in the order given. Cook over low heat, stirring frequently, until the consistency of marmalade. Cool before using.

Place fruit on to pie crust. Fold in half. Seal edges with fork dipped in water. Fry each pie in small amount of Crisco, browning on both sides.

This is not Mama's recipe (no one seems to know it), but it would be wonderful if this tasted like Mama's fried pies.
