1 lb. raw shrimp
1 qt. water
1 can beer
1 lemon, sliced
1 stalk celery, diced
1 small onion, chopped
2 bay leaves
tobasco sauce to taste

Directions:
Directions:
Combine all ingredients except shrimp in a large kettle.
Bring to a boil.

Add shrimp and cover.
Return to boil and simmer 3-4 minutes.
Stir, let stand off heat for 3-4 more minutes.

Remove shrimp and rinse in cold water.
Drain and chill. Peel if desired.

Personal Notes:
Using large shrimp (12-16 count/lb.) works best for appetizers. If you are making a large batch for "Peel-and-eat shrimp", medium size is good.
