1 chicken, cooked and cut up
4 cans chicken broth
1 t salt
1 onion, chopped
2 cups diced celery
2 cups diced carrots
2 cups diced potatoes
2 cups uncooked Minute Rice
2 cups water
16 oz Velveeta
Directions:
Directions:
In a large stock pot, bring chicken, vegetables and rice to a boil. Reduce heat and simmer, stirring occasionally, for 1 1/2 hours. Add cheese and melt. Stir and serve.
