1 pkg. Baker's German brand 1 tsp. vanilla
sweet chocolate 2 1/4 c. sifted all-purpose flour
1/2 c. boiling water 1 tsp. baking soda
1 c. butter or margarine 1/2 tsp. salt
2 c. sugar 1 c. buttermilk
4 egg yolks 4 egg whites, stiffly beaten



Icing

1 c. evaporated milk 1 c. sugar
3 slightly beaten egg yolks 1/2 c. butter or margarine
1 tsp. vanilla 1 1/3 c. coconut
1 c. chopped pecans

Melt chocolate and vanilla in the 1/2 c boiling water. Cream butter and sugar until fluffy. Add yolks, 1 at a time, beating well after each. Blend in vanilla with chocolate and water. (The vanilla and chocolate was put in the small cooker with the 1/2 c. water to melt chocolate. The water, chocolate and vanilla will be added to the sugar and margarine at the same time.) Sift flour with soda and salt; add alternately with buttermilk to chocolate mixture, beating after each addition until smooth. Fold in beaten whites. Pour into sheet cake pan, or three 9-inch layer pans. Bake at 350 degrees for 30 to 35 minutes. Cool; frost tops only.

Icing Directions

Combine evaporated milk, sugar, egg yolks, margarine and vanilla. Cook and stir over medium heat until thickened, about 12 minutes. Add coconut and chopped pecans. Cool until thick enough to spread, beating occasionally. Makes 2 1/2 cups.

My family loves the icing, so at times I double the ingredients.
