4 chicken breasts
8 ounces noodles
1 pound Velveeta
1 (10 ounce) can Rotel
1 onion, chopped
1 bell pepper, chopped
butter
3 ounces mushrooms (optional)

Directions:
Directions:
Cook chicken for about 1 hour at 350 degrees. Cut into small pieces and set aside.
Cook noodles; drain.
Melt Velveeta and add Rotel.
Saute onions, bell pepper and mushrooms in butter.
Mix chicken, noodles, Rotel and vegetables together in a greased 9" x 13" dish.
Cook for about 30 minutes at 300 degrees (until hot and bubbly)
Bake for 30 minutes or until hot and bubbly.
