2 Tbsp. yeast (instant)
1/2 c. sugar
2 1/2 c. warm water
1/2 c. oil
2 eggs
2 tsp. salt
6 1/2 to 7 c. flour

Directions:
Mix. Place in greased bowl overnight or in fridge for 4-5 hours. Shape by rolling out a large circle. Use a pizza cutter and cut in triangle shapes, then roll into crescent shaped rolls. Do this by starting at the base of the triangle and rolling to the tip. Raise until double in size (approx. 2 hours since dough is cold). Bake @ 350º for about 20 min. or until golden brown.

I use my hands to push the dough into a large circle and don't use a rolling pin. It seems to make a softer, less tough roll.
