1 1/2 cup cooked pork roast, cubed
3/4 cup seedless raisins
1/2 cup mayonnaise
1/4 tsp. ginger
1/2 tsp. nutmeg
1 tsp. soy sauce
2 T. lemon juice
1/2 cup toasted slivered almonds
1 cup chopped celery
3/4 cup flaked coconut
salad greens
pineapple slices
peach halves
pear halves
figs
grape clusters

Directions:
Directions:
Roast pork loin uncovered on a rack in 325º oven to 170º on the meat thermometer. Cool.
Put raisins in saucepan and cover with water; bring to a boil. Remove from heat, cover, and let stand for 5 minutes, drain.
In small bowl, combine cubed pork, almonds, celery and coconut. Add raisins. Pour mayonnaise mixture over pork mixture and toss lightly. Chill.
On a large plate, arrange salad greens, unmold pork salad in center of greens. Arrange fruits around pork salad. Garnish with additional coconut and almonds.
