1/4 c of cold water
2 envelopes of Knox gelatin (or Cherry jell-o)
1 c of hot water
1 c sugar or splenda
juice of 1 lemon
1 no. 2 can crushed pineapple
3 regular boxes dream whip
1 large angel food cake
1 c coconut
1 bottle of maraschino cherries
sliced strawberries can also be used
Nuts if desired

Directions:
Directions:
Soften gelatin in cold water for 5 minutes. Add hot water, stir until gelatin dissolves. Add sugar, lemon juice, and pineapple (also juice). Stir well. Chill mixture until it begins to thicken. Prepare topping according to directions on package. Fold topping into gelatin mixture. Save half of mixture for top of cake. Line a pan with wax paper. Crumble cake in one-inch pieces. Add gelatin mixture in layers. Press firmly with back of spoon. Chill overnight. Turn out on tray, if desired. Cover with topping and coconut, cherries, and nuts.

I only use 1 pkg. of Dream Whip on top of cake. I also buy 2 loaf size cakes and slice with a knife and layer in pan. I make my cake in a glass 9 X 13 rectangular pyrex pan and avoid the steps of wax paper and turning out of pan.
