2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1/4 teaspoon crushed red pepper
salt to taste
pepper to taste
2 cups diced chicken
2 cans artichoke hearts, drained & chopped
2 tablespoons flour
4 ounces cream cheese
32 ounces chicken broth
4 ounces jalapeņo jack cheese, grated
1/4 cup shredded Parmesan cheese

Directions:
Directions:
Saute onion, garlic and seasonings in olive oil on medium/low heat until onion is soft, about 10 minutes. Add chicken and artichokes and saute another 10 minutes.
Add flour; stir well. Make sure there are no lumps of flour. Add cream cheese to mixture. Stir until cream cheese is melted. Add chicken broth and stir. Add jack and Parmesan cheeses.
Cook on medium/low heat for at least an hour, stirring frequently.
