"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Heat the milk in a small saucepan until bubbles form around edge of pan, remove from heat. Add sugar, salt, and butter. Stir until butter is melted. Let cool to lukewarm. In large bowl of electric mixer sprinkle yeast over water. Stir until dissolved. Add milk mixture, eggs, 2 c. flour and beat 2 minutes at medium speed. Beat until smooth. Beat in remaining flour about 2 minutes. With a wooden spoon, beat in remaining flour until smooth. Dough will be soft. Cover and let rise in warm place (85º) until double in bulk, about 1 hour. Punch dough down, turn out onto well floured board, turn over to coat with flour. Knead 10 times to smooth dough. Cover with mixing bowl and let rest for 10 minutes. Roll dough to 1/2 " and cut with floured 3" doughnut cutter. Let rise until double in size, about 45 minutes. Fry in deep fat (375º) until golden brown. May dip in glaze or roll in cinnamon and sugar while hot.
