2 pork tenderloins
1/3 cup olive oil
1/4 cup minced fresh parsley
2 garlic cloves, minced
1/2 tsp. ground ginger
2 tsp. dried oregano
2 tsp. dried rosemary
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika
1/4 tsp. nutmeg
1 tsp. sage
1/2 tsp. thyme

Directions:
Place tenderloins in ungreased 9 x 13 pan on a rack. Combine remaining ingredients and rub over tenderloins. Cover and refrigerate 6 hours or overnight. Bake uncovered at 425º for 25-30 minutes of until meat thermometer reads 155º. Let stand for 5-10 minutes before slicing, allowing temperature to rise. Optional--eliminate slat, pepper and paprika if you use pork seasoning. Quick version--sprinkle tenderloin generously with pork seasoning, parsley, sage, rosemary and thyme. Cook on rack the same way.
