Baked Stuffed Zucchini Recipe

4 medium fresh zucchini
1 lb. lean ground beef
1 c. cooked instant white rice
20 oz. can diced tomatoes (drained)
5 oz. tomato soup
1 tsp. black pepper
1 tsp. garlic powder
1/2 tsp. salt
Mozzarella, Swiss or provolone slices

Directions:
Directions:
Wash zucchini, slice lengthwise and scoop out seeds.
Set aside in glass baking dish.
Brown ground beef, drain grease and let cool.
Mix cooled ground beef, rice (cooked), drained tomatoes and soup.
Add seasonings.
Fill zucchini with ground beef mixture.
Add 1 slice of cheese to each zucchini.
Cover pan with aluminum foil.
Bake at 350º for 25 - 35 minutes.

These can also be cooked on the grill.
Simply wrap each stuffed zucchini in foil.
Place on medium low heat.
Cook 15 - 20 minutes.
