2 Boneless/Skinless Chicken Breasts
2 T. Flour
Salt and Pepper
1 Bottle of Marsala Cooking Wine
2 T. Olive Oil or Canola Oil
1 tsp. Minced Garlic
1 Small can of Mushrooms
1 T. Parsley

Directions:
Directions:
Flatten chicken with meat mallet or other heavy utensil. Combine flour, salt and pepper. Cover the chicken in the flour mixture.
Using a skillet; heat oil on medium/high and then add parsley and garlic. Saute for a few seconds then add chicken and cook until brown on both sides. Add mushrooms and saute for a couple of minutes. Then add the wine and turn the heat to low, cover and let simmer for about 5-10 minutes.
Add salt and pepper to taste.

Serve over your favorite pasta.

If you prefer your sauce thicker, combine 1 tsp. of corn starch and 2 tsps. of water. Turn heat up, remove chicken and stir in the corn starch mixture a little at a time until desired thickness is reached. Mix more if needed.
