2 cups fresh bread crumbs
1/2 cup freshly grated Parm cheese
1 tsp kosher salt
1 tsp finely chopped fresh oregano
1/2 tsp freshly ground pepper
1/4 cup all purpose flour
2 eggs, beaten
8 boneless thin cut pork loin chops (1/4 in. thick)
4 tbsp olive oil, divided

Directions:

In a small shallow bowl stir together crumbs, cheese, oregano, salt and pepper. Place flour in another shallow bowl; place beaten eggs in sthird shallow bowl. Placen wire rack over baking sheet.

Dip each chop in flour, shaking off any excess. Dip in egg; dip in bread crumb mixture, patting both sides to make sure mixture adheres well. Place chops on rack over baking sheet. Refrigerate at least 30 minutes or up to six hours.

Heat oil in large skillet over medium high heat until hot. Add chops and cook 2 - 3 minutes until golden brown, turning once.

Lauren- if you have a blender or food processor, tear bread into chunks and put in it and pulse 30 - 60 seconds until you get crumbs
