2 lbs. carrots
2 lg. yellow onions (Vidalia are #1)
1/4 - 1/3 stick butter
1/4 tsp. salt
1/8 tsp. black pepper
2 tsp. parsley

Directions:
Directions:
Rinse & peel carrots. Slice carrots about a 1/4 inch thick (on an angle).

Cut onion in 1/2 and then slice (not chopped or in rings).

In large skillet over medium heat melt butter and add carrots, salt & pepper. Cover and cook for 5 minutes; then toss/stir, cover and cook additional 5 min. Add all onions; toss/stir together; cover for 5 more minutes. Remove lid, add parsley, toss/stir and cook for 5 more minutes or until carrots are tender. Serve & enjoy!

A note from Brian: If you prefer this dish slightly more caramelized, add 1/2 tsp. of sugar when adding carrots. Tradition - Brian usually makes this dish at the Christmas and Thanksgiving holidays in our home and oftentimes throughout the year. They're so good!
