"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
In a medium-sized bowl, combine butter and sugar. Beat the mixture until it's light and fluffy (about 2 min.)
Mix in beaten egg, add molasses and stir until the mixture is a uniform colour.
Add baking soda, salt, ginger, cinnamon, nutmeg and cloves (if using.) Stir until thoroughly mixed in.
Stir in flour one cup at a time, mixing well between additions.
Place 1/4 cup white sugar in a shallow bowl.
Roll dough into one inch balls, roll in sugar, and place on a greased cookie sheet (about two inches apart).
Bake at 350º F for about 10 minutes, cool on the cookie sheet, for 2 minutes before removing to a wire rack to cool completely.
If using glaze, spread on top of cookies when they are completely cool.

Personal Notes:
I never use the glaze as I like them just the way they come out of the oven. I've always left out the cloves too. These cookies are very addictive!
