1/2 cup finely diced onions
1/2 tsp dried oregano
2 T olive oil
1 1/2 cups diced fresh tomato
8 oz crumbled gorgonzola, about 3/4 cup
1/2 cup bread crumbs
salt and pepper
4-6 medium portobello mushrooms
1/2 cup parmesan cheese

Directions:
Preheat oven to 400'. Saute onions with oregano. Add tomato and cook for about 2 minutes. Remove from heat and add gorgonzola. Mix in bread crumbs, season with salt and pepper to taste, cool. Remove mushroom stems and scrape out underside fringe. Divide stuffing into each mushroom, sprinkle with parmesan. Bake on cookie sheet for 15 minutes, until top is browned.

This is a yummy vegetarian meal, serve on top of a bed of greens with vinaigrette. It is also a nice first course. One of my favorites!
