1 1/2 cups all purpose flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1 cup yellow cornmeal
1 cup sugar
1 cup milk
5 tbsp. unsalted butter (melted, save some for greasing the muffin tins)
1 large egg
makes 12 muffins

Directions:

Preheat the Oven to 400ºF. Sift flour into a large bowl add baking powder, salt, cornmeal and 2/3 of the sugar, whisk well. In another bowl, combine the milk butter and egg. Beat until blended, then add the wet ingredients to the dry ingredients and stir with a wooden spoon just until mixture is moistened.Spoon the batter into 12 greased muffin tins, sprinkle tops with the remaining sugar. Bake for 20-24 minutes until muffins are golden. Serve warm.
