Smoked Turkey Recipe

Brine:
1 gal. water
1/2 c. pickeling salt
1 c. Mortons Tender Quick
5 Tbsp. liquid smoke

12 to 14 lb. turkey
Oil
1 large plastic bucket

Directions:
Directions:
Mix all ingredients together in a plastic bucket.
Clean turkey, inside and out removing the neck and pieces.
Submerge turkey so it is completely covered in brine. Lay a heavy plate on top of turkey to weight it down. Let it sit in a cool room, like the garage, for 24 hours.
Remove from brine and dry with a paper towel.
Oil the turkey, do not use margarine or butter.
Place turkey breast side down on a baking rack, do not cover.
Bake at 350º for first hour. Lower heat to 250º. Bake 1 hour per pound of bird.
Put foil over wings during last hour of baking or they will get to hard and dry.
Cool on rack.

DO NOT USE A BUCKET THAT HAS ANY METAL ON IT.
If the brine doesn't cover the turkey completely make a little more of the mix until it is covered.
