4 nine oz salmon filets
10 oz crab meat
1/2 c Italian bread crumbs
1 tsp garlic powder
1 tsp fresh chopped parsley
2 tsp Old Bay seasoning
1 egg (large)
Olive oil, dill, garlic powder, salt and pepper

Directions:
Directions:
In a bowl, mix crab, bread crumbs, garlic powder, parsley, Old Bay, and egg. Be sure to mix very well with your hands. Refrigerate for about an hour.

Meanwhile, cut a slit in each of the filets. Make sure not to cut through. Apply a think coat of olive oil to rough side of salmon. Sprinkle with dill, garlic powder, salt and pepper. Allow 15 to 20 minutes for season to marry with salmon. The slits should be almost as wide as the filet.

Take crab mixture and stuff in slit of salmon, as much as you wish. In a hot pan with a thin layer of olive oil, sear seasoned rough side of salmon until you see a thin white layer.

On a lightly oiled cookie sheet, place salmon smooth side down. Bake in oven at 400 º until desired doneness. My personal-best doneness is medium well, about 7 - 8 minutes. Bake longer if desired.

Serve straight from the oven.
