1 bag baby organic spinach leaves, torn into pieces
15-20 organic grape tomatoes, cut in half
1/2 jar of roasted red peppers, sliced
1 orange, sectioned and skin removed (or 1 large can of mandarin oranges, drained)
1/2 cup of almond slivers or pine nuts
1 avocado, cut into slices
shavings of raw parmesan cheese as a garnish

Directions:
Directions:
Arrange ingredients in order listed, divided on 4 salad plates and drizzle with citrus vinaigrette below.

Citrus Vinaigrette:
1/4 cup extra-virgin olive oil
juice of one lemon
1 tablespoon fresh orange juice
1/2 teaspoon lemon zest
1 teaspoon raw honey (optional)
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper

Whisk all ingredients together in a medium bowl.
