Ingredients: Cake 1 (4-serving size) box lemon jello 1 (18.25-ounce) box white cake mix 4 eggs 1-1/4 cups water 1/4 cup oil
Glaze 2 cups powdered sugar 2 teaspoons grated lemon peel 3 to 4 tablespoons fresh lemon juice

Directions:Preheat oven to 350°F. Lightly grease 13×9-inch cake pan.
Combine cake ingredients in large bowl; beat for 2 minutes. Pour batter into prepared pan. Bake at 350°F. for 45 minutes, or until cake springs back when lightly touched.
Meanwhile, place powdered sugar and lemon peel in a small bowl; stir in enough lemon juice to make a thin glaze consistency. While cake is hot, prick all over with fork. Pour glaze evenly over hot cake. Cool. Cut into squares. Garnish with whipped cream if desired. |

Notes: I think that Mom got this recipe from our cousin Barb Hanson Olson. Barb and here husband George lived in Minneapolis with their 3 children Lynn, Suzanne, and Craig. I remember visiting Minneapolis when I was very young while Uncle Frank Hanson and his wife Alice, Barb's parents, still lived there. Eventually Uncle Frank and Auntie Alice moved to Apache Junction, Arizona where they retired in the 1960's. Over the years I have lost touch with Barb Hanson and her brother Jerry. I know that Barb divorced and remarried many years ago.
