1/2 lb. ground chuck
1 can cream of mushroom soup
1/2 cup fine dry bread crumbs
1/2 cup cheddar cheese, cut into 1/2 inch cubes
1/4 cup chopped onion
2 eggs, slightly beaten
1/2 tsp. salt
dash of pepper
1/4 cup water

Directions:
Directions:
Mix together ground chuck, half of the can of soup, bread crumbs, cheese, onion, eggs, salt and pepper. Shape into a loaf and place in shallow pan. Bake at 350 degrees for one hour.

In a small pan, blend together the other half of the soup, 1/4 cup of water and 2-3 tbsp. of the drippings from the meat loaf. Heat and serve as sauce for the meatloaf.

This recipe if from the Jeff and Laura Laughlin cookbook that they gave as wedding favors. This is one of Laura's Mom's recipes. Laura was a very special young woman who passed away long before her time, having only been married about a year before an accident left her totally incapacitated for another year until her death.
