1 tsp. cornstarch
1 cup tomato juice
3 tbsp. packed brown sugar
1/2 tsp. ground cinnamon
1 pkg. [ about1 lb] baby carrots, cooked & drained
parsley for garnish

In 2 qt. saucepan, stir together first 4 ingredients until smooth. Cook over medium heat until mixture boils & thickens, stirring constantly. Add carrots & heat through.
