1 lb. chicken, cooked and boned
1 tsp. corn oil
1 medium onion, diced
1 tsp. garlic powder
1 tsp. cumin
1 tsp. chili powder
2 cans white hominy
2 fresh tomatoes, diced
1 small can pickled jalapeņos
1 bunch cilantro
2 limes
Sour cream
Tortilla chips

Directions:
Directions:
Heat oil over medium heat, add onion and cook until soft, but not browned. Add garlic powder, cumin, chili powder, hominy, tomatoes, jalapeņos and chicken to a crock pot. Cook on low 2 1/2 hours. Add chopped cilantro before serving. Serve with lime juice, squeezed over the top, and sour cream. Serve with tortilla chips instead of crackers.
