3/4 cup white rice (not Minute Rice)
1 tsp. salt
1 qt. milk
1/2 cup sugar
1 tsp. almond extract
2 cups heavy cream, whipped and sweetened to taste
1/2 cup almonds chopped (optional)
1 whole almond (optional)

Cook rice, salt, and milk in double boiler until rice is soft and mixture is thick - about 1 1/2 hours. Add sugar and almond extract. Chill. Add almonds. Stir in whipped cream. Serve with red fruit sauce (lingenberry).

When I was growing up I always had an interest and natural ability for cooking and baking. Much to my Mother's amusement I would try out different recipes and cooking methods. I once asked her what they had for dessert when she was growing up and "viola" she made cooked sweet rice! I loved it and can remember her making it in the top of her aluminum double cooker. She did not add whipped cream or almond flavoring. I always made "sweet rice" for our family and our boys often requested it as they were growing up. Later in life I decided to "create" a collection of Norwegian recipes and one of the recipes I found was our wonderful cooked sweet rice with whipped cream and almond flavoring added. Of course, I had to try it and liked the enhanced version very much. Now this is also added to our Christmas dinner. I also take Rice Cream and lefsa whenever Les and Ruby visit and we all travel to Tyler for potluck and visiting.
