4 c. coarsely chopped onion (Vidalia preferred)
1 can Campbell's cream of mushroom soup
1 1/2 cups dry cornbread stuffing (Stovetop)
1 c. sour cream
1 c. shredded cheddar cheese
2 c. coarsely crumbled butter crackers

Directions:
Directions:
Saute onions in small amount of oil or butter until crisp/tender. Mix together soup, cornbread stuffing and sour cream. Combine onions and soup mixture in a 2 qt. casserole dish. Top casserole with shredded cheese, then crumbled crackers. Bake in pre-heated 325º oven for 45 minutes, or until heated thoroughly. Serve warm.

This is a recipe from an old and dear friend of mine. If Vidalia onions are out of season, substitute another variety of sweet onion. Try it, you'll like it!
