50g butter
3 egg yolks
8 tbsp single cream
salt & pepper
grated rind and juice of 1/2 a lemon
2 tbsp fresh parsley, finely chopped

Directions:
Directions:
Heat the butter until melted, then add the beaten egg yolks and cream. Season to taste with salt and pepper. Let the sauce thicken over a low heat without boiling then add the lemon juice and grated peel. Stir in the chopped parsley. Serve hot.
