6 large raw potatoes
ham shank
4 slices unsalted side pork (cubed)
flour
salt and pepper

Directions:
Directions:
Boil the ham shank until meat is cooked. Remove from broth and cool. Remove meat from bone and put through food chopper. Grind raw potatoes. Add remaining ingredients adding enough flour to make a stiff dough. Shape into dumplings inserting a piece of side pork into the centre of each dumpling. Place dumplings into boiling ham stock. Simmer approximately 1 hour. Serve with butter and fried side pork.
