1 lb black eyed peas (soaked for 1-2 hours)
1 lb of tender meat, diced
2 large carrots,. diced
2 tomatoes, diced
1 potato, diced
1 large onion, diced
1 T parsley
1/2 T cumin
1/2 tsp pepper
1/2 tsp garlic
1/2 tsp oregano
1/2 tsp paprika
salt to taste

Directions:
Directions:
Cook black .eyed peas in 12 cups of water with salt, until done, but not too soft.
Meanwhile cook onion iin one T oil for 1 minute. Stir in tomatoes. and cook for another minute.
Add the meat.and:some salt to taste, stirring occasionally until done.
Add the meat and sauce to the black eyed peas Add all the rest of .the ingredients,
Cover and continue cooking until vegetables are tender.
