1 Pkg. Fresh Linguine
1 tbsp. Olive Oil
1/2 lb. Pancetta or Lean Bacon, chopped
1/3 c. Light Cream
4 Eggs
4 tbsp. Fresh Grated Cheese

Directions:
Directions:
Heat olive oil in a heavy skillet and add the chopped pancetta or bacon. Cook until crisp, about 8 to 10 minutes, stirring frequently so it doesn't burn. Remove from pan and drain on paper towels. Discard most of the fat from the pancetta or bacon from the pan, leaving just enough to coat the bottom of the pan. In the meantime while the pancetta is cooking, heat a large pot of salted water for the pasta. Add pasta and cook as per package instructions. Beat eggs with cream in a small bowl and season with salt and pepper. Add the egg mixture and half of the cheese to the skillet and put cooked pancetta back in skillet. Stir well to incorporate the pancetta with the liquid. Drain pasta, add to the skillet and mix well to coat the pasta. Transfer to a warm serving bowl, sprinkle with the extra cheese and serve.

This is one of my favorite dishes that my husband Paul makes for me. It is quick and easy and can be made to serve more than 4 by adjusting the ingredients. Goes well with a nice white wine.
