4 Pickerel filets, bones and skin removed
2 cups milk
1 tbsp vinegar or lemon juice
1 1/2 cups crushed saltine crackers (unsalted tops)
paprika
olive oil

Directions:
Directions:
Soak fish in a bowl of heavily salted water for 1 hour (this removes any "fishy taste") drain and rinse.

Place milk in a large bowl. Mix in the lemon juice or vinegar.

Place the filets in and let soak for another hour, drain and rinse.

Dredge filets in crushed cracker crumbs and place on a wire rack on top of a cookie sheet.

Liberally cover the top side of each fish with paprika.

Dot with Olive Oil (sparingly).

Bake at 375 F for about 15-20 minutes (depending on thickness of filets).
