Ingredients:  
5 boneless chicken Breast
1 can of Rotel Tomatoes
1 package of flour tortillas
8 oz. Velveeta Cheese
8 oz. mozzarella cheese
1/2 onion
1/2 cup of diced jalapeños
1 package of taco seasoning

Directions:
Directions:
Cook chicken and shred. Mix and all ingredients together and cook until cheese is melted. Put mixture on tortillas and roll and place into 9x13 greased pan.
Top with:
One can enchilada sauce
One bag of shredded mexican blend cheese
Bake at 350º for one hour

For more spice:
An 8oz block of pepperjack cheese can be substituted for mozzarella cheese.
