8 egg whites (1 cup)
1/4t. salt
1t. cream of tartar
1-1/3c. sugar
6 egg yolks (5/8c.)
1/2 orange rind (half an orange)
1-1/4c. cake flour
BOILED FROSTING:
2c. sugar
1/4c. corn syrup
6T. water
2 egg whites
1t. vanilla OR 2T. orange juice, but NOT both

Directions:
Directions:
Beat the egg whites with salt until they are foamy. Add the cream of tartar and beat until stiff. Fold in the sugar. Beat yolks until thick and lemon colored. Fold about 1/3 of the egg white mixture into the yolks. Blend well using a folding motion, then add this to the remaining egg whites. Add the grated orange rind and fold in the flour, sifted once before and several times after measuring. Bake in an ungreased 10" tube pan at 325º for 1 hour.
ICING:
Cook sugar, syrup, water to 240º or soft boil stage. Turn off burner and let sit on burner. Quickly beat egg whites. Slowly pour syrup over egg whites beating with a spoon while adding. Add juice or vanilla and beat til almost cold. This icing should hold it's shape.
