4 cups diced apples
2 cups sugar
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2 eggs
1 cup vegetable oil
1 teaspoon vanilla
1 cup chopped walnuts


Directions:

Mix apples and sugar. Let stand 1 hour.

Sift together flour, baking soda, and spices.

In a large bowl, beat eggs. Stir in oil and vanilla. Add the apple mixture and combine. Add the flour mixture and gently mix together. Stir in chopped nuts. Pour into greased and floured tube pan. Bake at 350 degrees for 1 hour. (Decrease heat to 325 degrees if using dark, coated pan. Add approximately 5 minutes to baking time. Cake is done when toothpick comes out dry.)
