1&1/2 cups Vegetable Oil
3 Eggs
2 teaspoons Baking Soda
2 cups Flour
1&1/2 cups cold Mashed Sweet Potatoes
1/2 teaspoons Salt
2 teaspoons Baking Powder
2 teaspoons Vanilla
2 teaspoons Butter
1 teaspoon Nutmeg
1 teaspoon Cinnamon
Filling/Icing
8 oz. Cream Cheese (softened)
1/2 cup Butter (softened)
1 box Powdered Sugar
1 cup Nuts (chopped)
1 teaspoon Vanilla

Directions:
Directions:
Completely cream sugar and oil. Beat the eggs (thoroughly), and add to sugar/oil. Add potatoes, soda, flour, salt, baking powder, vanilla, butter, nutmeg, and cinnamon, and mix thoroughly. Pour into greased tube pan, and bake at 350 degrees for one hour, or layer pans at 325 degrees for one hour. Mix filling/icing and after cake is cooled spread icing evenly on cake.
