2 Cups dry navy or great northern beans (dry)
5 Cups chicken broth
1 ham hock or shank
1 medium onion, chopped
2 stalks celery with leaves
2 tsp. bay seasoning
1 bay leaf
Ketchup
Salt and pepper to taste

Directions:
Rinse and sort beans in a large pot. Add 6 to 8 cups cold water and let stand for at least 6-8 hours (preferably overnight). Drain and rinse beans. In the same pot, simmer broth, beans, ham, onion and celery. Add bay seasoning and bay leaf and simmer for 2-3 hours until beans are tender. Add ketchup, salt and pepper to taste.

I add extra stock for more broth. The salt, pepper and ketchup will vary to ones taste so I let each person add their own to their bowl.
