1 Large 7 bone beef roast
4 carrots, sliced
4 stalks of celery, sliced
1 onion, diced
4 potatoes, chunked
1/2 head green cabbage, shredded
6 cups cold water.... add more later if needed
3 beef bouillon cubes
1 11 1/2 oz can V8 juice
3/4 cup barley (cooked in microwave)
2 T oil

Brown the seasoned 7 bone roast on all sides in the oil. Add water, beef cubes, and V8 to the browned roast and boil for a couple hours until the roast is tender. Take the roast out of the pot to cool, Strain the broth or remove fat from broth if you want. (Grandma didn't) Add everything but the cabbage and barley to the pot to cook for an hour. Chunk up the cooled pot roast removing the bones and fat. Add the roast back to the pot along with the cabbage and cooked barley. Soups on in 30 minutes.

I never saw a written recipe for this soup, but had it and requested it year after year in the winter. I followed Grandma around in the basement, where she made this. Grandma said the 7 bone roast is the best because all the flavor from the bones, and the V8 was her special ingredient.
