6 cups diced potatoes

1 1/2 cup roughly chopped ham pieces

1/2 cup diced celery

1/2 cup diced carrots

1/2 cup diced onions

4 - 6 Tbs butter

2 Tbs flour

3 cups chicken broth

2 cups whole milk

1 tsp garlic salt

1/2 tsp pepper

1/4 tsp dill weed

1/2 cup sour cream
Directions:
Directions:
boil dice potatoes for about 10 minutes, until a fork sticks into them easily, drain and set aside

- melt 4 Tbs butter in medium sauce pan

- dice vegetables, cook in melted butter until onions are soft and transparent, add additional 1 - 2 Tbs butter at this point if vegetables are "dry"

- add garlic salt, pepper and dill weed

- slowly add flour, whisking while adding to avoid lumps

- slowly add both broth and milk at once into pot of vegetables, whisking while adding to make smooth and free of lumps

- add sour cream

- let this base bubble and thicken, it will look like a cream soup

- in large pot add potatoes, ham and soup base, and stir together



if you want a thicker, creamier soup:

- using slotted scoop, scoop out about 3 cups of solids (potatoes, veggies and ham) and puree them in a blender until creamy and smooth.

- add pureed stock back to soup and mix well

You can serve this immediately, but I like to put it in the crock pot on "keep warm" for a couple hours and let the flavors meld through.
