Stuffed Pepperoncini Peppers Recipe

1 lg. jar Pepperoncini peppers
1 lb. ground beef
4 slices day old bread
1 egg
1/2 small diced green bell pepper
1/2 small diced small onion
1 glove crushed garlic
1 tbsp. each dried basil, oregano
Olive Oil
Salt & Pepper to taste
Parmesan Cheese

Preheat oven to 350
Sauté green pepper and onion in a little butter and olive oil until opaque. Add garlic and continue to sauté 5 minutes. Set aside into a bowl.
Break up bread into small pieces. Add egg, basil and oregano. Add ground beef, and mix together. .
Add to pepper, onion and garlic mixture. Salt and pepper to taste. Sprinkle a little parmesan cheese into mixture. (You may add a little beef broth or milk if mixture appears to be dry.)
Slice pepperoncini peppers lengthwise. Depending how hot you want these peppers, take seeds out of peppers carefully. DO NOT TOUCH YOUR EYES. THEY WILL BURN LIKE HELL!!!!
Stuff pepperoncini with meat mixture lightly.
Place pepperoncini in baking dish. Lightly pour a little olive oil on top and sprinkle with parmesan cheese.
Cover dish with aluminum foil and place on middle rack of oven.
Bake for approximately 25 minutes.
Uncover peppers and bake for additional 5-10 minutes
