1 qt. veggie or chicken broth
2 cups shredded chicken (rotisserie or other)
1 cup cooked rice
1/2 tsp salt
2 tbsp. minced fresh ginger
1/4 cup vegetable oil
2 large cloves garlic, thinly sliced
1 large shallot, thinly sliced
1 tbsp flour
1/2 cup each cilantro and fresh basil leaves (Thai basil if possible)
1 fresh red chili (Thai or jalapeņo, your choice), halved and sliced fine.

-Put broth in large pot and bring to a simmer. Add chicken, rice, salt and ginger; simmer 15 minutes.
-Heat oil in a small saucepan over high heat. Fry garlic, turning constantly with a slotted spoon, until golden brown, about 2 minutes. Transfer to paper towel to drain.
- Put shallots in a small bowl and toss with flour to coat and break into rings. Fry shallots in same hot oil until golden brown, drain on paper towel.
- Ladle soup into bowls. Top each with herbs, a spring of fried garlic and shallot and chili.
Optional: you can also add chili in the soup at beginning if you prefer it to be cooked.
