3 envelope gelatin
11 oz. mandarin oranges
3/4 c. milk
10 oz. frozen raspberries
1 c. boiling water
1/2 c. slivered almonds
1/2 c. sugar
1 T. almond extract

Directions:
Directions:
Mix gelatin in cold milk to soften. Add hot water and stir to dissolve. Add sugar and almond extract. Pour into a square 9 x 9 baking dish and chill till firm. Cut into 1/2" cubes and place in bottom of small bowls or compote dishes. Top with well drained fruit and slivered almonds.
(can use fresh fruit if you prefer, but the frozen works just fine)

This is a recipe I found somewhere years ago and it is perfect for using after an especially heavy or rich meal. It is extremely light and fresh tasting. Greyt for summertime too. And easy!
