1/3 of Tuscan beef mix, 2 1/2 cups
1 c. frozen peas and carrots
2 c. homemade or prepared instant mashed potatoes
Pinches of paprika (optional)

Directions:
Preheat oven to 375º. Place Tuscan mix in a large bowl. Put frozen vegetables in a sieve and rinse with water to melt ice. Drain well. Pat dry with paper towels. Carefully stir into beef mixture just until evenly mixed. Overmixing will toughen meat loaf.

Line a rimmed baking sheet with foil or parchment paper. Place mixture in centre, then pat into a 9×5" free-form loaf. Bake for 30 min.

Spoon potatoes over loaf, then spread into a layer about 3/4" thick. Sprinkle with paprika. Continue baking until a thermometer inserted in meat loaf reads 160º, from 25 to 30 more min. Let stand 5 min. Cut into slices.
