2 quarts soft water
2 cups green split peas
1 branch celery chopped
1 small onion chopped
1/4 teaspoon ground thyme
1 pinch of cayenne pepper
1 bay leaf
Salt and pepper

Directions:
Directions:
Place all the ingredients into a large stock pot and boil hard for 20 minutes, then lower heat to a simmer until peas are tender. Strain though a fine sieve then return to stock pot and reheat to the boiling point.

This is the best pea soup ever! We top our soup with diced ham, diced red onion, herb croutons, crumbled bacon and grated sharp cheese! Yummy!
