2 beaten eggs
2 tbsp. cooking oil or sesame flavoured oil
1 sliced green onion including tops
1 clove garlic, minced
4 cups cooked rice
3 tbsp. soya sauce
1/4 tsp. crushed red pepper

Directions:
Directions:
In a 12 inch skillet cook eggs in l tbsp. of the oil, with stirring, till set. Invert skillet over a baking sheet to remove cooked eggs, cut into short, narrow strips. In the same skillet cook green onion and garlic in remaining oil till onion is tender. Stir in cooked rice, the 3 tbsp. soya sauce, red pepper and egg strips. Heat through, if desired. Sprinkle with additional green onion.

Note: Add 1 grated carrot and 1/2 c. frozen peas just heating through. You may add 1/2 c. shredded cooked pork or 1/2 c. chicken.
